Traditional method.

Varietals: Räuschling, Chardonnay and Pinot Noir.

Tasting notes: Discreet notes of exotic and white fruits (fresh pear. Light, mineral and refreshing.

Gastronomy: Oysters, seafood, Asian food, poultry, fish.

Serving temperature: 10–12°C

Storage: 2 to 15 years

Vineyard: 35-year-old Räuschling vines, young Chardonnay vines, all on steep slopes.

Vinification:

• early harvest to keep freshness and lightness
• very gentle whole bunch pressing (like champagne)
• spontaneous, natural fermentation, no inputs
• 12 months in a used 600 liter barrique barrel on the full lees
• Weekly bâtonnage for 6 months
• Spontaneous malolactic fermentation
• Bottled without filtration in August 2020 to start the natural fermentation
• 15 months on the lees
• Disgorged mid-December 2021
• No sulfur, no dosage
