Tasting notes: Fresh, delicate notes of wild berries and sour cherry, well integrated wood, long finish.

Gastronomy: Duck terrine, poultry, meat, game, grilled fish, cheese, Asian food.

Serving temperature: 14–16°C

Storage: +10 years

Vineyard: +50 years old Pinot Noir vines partially in slope vineyard.

Vinification:

  • early harvest to keep freshness and lightness
  • 4 weeks spontaneous fermentation on the skins in 6hl Buckets, no inputs
  • 11 months on the lees in barriques stainless steel tanks
  • Spontaneous malolactic fermentation
  • Filtration just before bottling with < 20mg/l free Sulfur
