2018 vintage vinified as an orange wine.
Biodynamic. Very light filtration.
Unusual blend Chasselas, Pinot Gris, Chardonnay, Sylvaner and Sauvignon Blanc.
Tasting note: Clear golden orange.
Notes of tea, orange peel, almond past and cider on the nose. Salty palate with tea and citrus notes, very mineral. Lovely structure with silky tannins and fine acidity. Persistent.
Gastronomy: Fish in sauce or with melted butter, seafood and shellfish, sushi, cheeses, Asian food.
Serving temperature: 10–12°C.
Storage: Many years.
Vinification: All five grape varieties from the dry walls are all harvested and vinified at once in concrete egg, no additives, three weeks maceration as a natural wine. Very light filtration and sulphites.
Production: 900 btls

"I would call this Switzerland white Romanée Conti."
"Le premier nez offre un bouquet à la fois profond et expressif sur des arômes de fleurs blanches. On a de l’aubépine et l'odeur des blocs de pierre humide. A l'agitation du verre une touche crayeuse souligne le deuxième nez puis tout après une fine odeur de pelure de citron jaune vient rappeler sa phase primaire. L’attaque est ciselée et intense avec une matière monstrueuse presque opulente et en même temps très nerveuse sur des notes de citron assez marqué. La bouche est une vraie synthèse de concentration de finesse. Les saveurs soutenues par du gras ainsi que la tension dans une harmonie totale. Milieu de bouche malgré une belle fermeté sort plutôt une trame aérienne avec des saveurs mentholées et d’agrumes. L’évolution en bouche combine vinosité, tannicité, tout en paramétrant vos papilles. Et ça vous donne un plaisir qui est presque incommensurable. Et c'est un vin qui est en fin de bouche colonisé par la minéralité de toute façon puisque que c'est à côté du mur et ça procure aux papilles surtout un plaisir presque irradiant."
