Tasting notes: Natural wine with notes of orange peel and a slightly hoppy tonic bitterness.

Storage: 2 to 5 years

Vineyard: Youg Souvignier Gris vines on steep slopes.

Vinification:

• early harvest to keep freshness and lightness
• 5 weeks spontaneous fermentation on the skins in 6hl Buckets, no inputs
• 6 months on whole yeast in used oaked barrels
• Bâtonnage weekly for 3 month
• Spontaneous malolactic fermentation
• Bottled with no filtration and no Sulfur
