Pale gold color, fine bubbles and a persistent cord. Fresh and elegant nose with vegetal aromas of cooked apples, pear, quince, mango and citrus. A supple, rich and balanced cuvée on the palate.
Gastronomy: Aperitif, starters, fish, seafood, scallops, asparagus, white meat, veal saltimbocca, hard cheese.
Grape variety: Chardonnay, Chenin
Serving temperature: 6 – 8°C
Storage: 2 years
Vinification: Traditional method. Bottle-fermented 20 months in the cellars at Prieuré St-Pierre, a priory founded by Burgundy monks in the 6th century.
